going with Redline 75W90 GL-4 gear oil
manual says only 2 quarts?
do you think it's OK for quick lube place to change the gear oil?

Two quarts sounds about right. A quick lube place should be able to handle this - just make sure they use your oil. Should also be easy enough for a DIYer to do it as well. The trick is to make sure the fill plug can be removed - too often people will drain out the lube only to find the fill plug impossible to break free. Some cases required an impact wrench to loosen the fill plug.
A 2007 std has gear oil in it these days??
Yup, still uses gear oil. Some manufacturers have switched to ATF, to help with colder weather shifting and reduce internal drag - but the Corollas are still gear oil.
